The best summer salmon + lemony orzo salad 🍋 please don’t be like me and forget feta at the store!!

Ingredients:
4 pieces of salmon
2 cups orzo
2 cucumbers, halved and chopped finely
½ cup halved kalamata olives
½ cup finely chopped sundried tomatoes (get the ones in oil)
⅓ cup finely chopped parsley
½ cup of feta
2 tbsp olive oil
2 cloves garlic minced
2 lemons
1 tbsp garlic salt
½ tbsp pepper
¼ tsp oregano + thyme

To make:
Start by cooking the orzo per the package instructions in salted water. While that cooks, chop the cucumbers, olives, sundried tomatoes + parsley. When the Orzo is done cooking, add it to a bowl with 2 tbsp olive oil, juice of one lemon, garlic salt and pepper. Mix it together and set in the fridge to cool.

While that cools, in a small bowl combine 2 tbsp olive oil, minced garlic, juice of ½ a lemon, oregano, thyme and pinch of parsley. Cut thin slices of lemon with the other half. Lightly oil a baking sheet to season the salmon with salt and pepper. Spoon the lemon oil mixture over the salmon and top with slices of lemon. Bake for 12 - 15 minutes until salmon is cooked through and flakey.

Add the cucumbers, kalamata olives, sundried tomatoes, parsley and feta to the cooled orzo. Mix everything together.

Once the salmon is done, plate with the orzo salad and enjoy it on the patio with your fav summer drink 🍹 mine is a crisp apple @drinkolipop always

**Mik’s tips: add a bed of arugula and tzatziki because you can never have enough sauce.

Need the girlies’ final votes do we keep or return the set.
Don’t ask how I’m going to fit everything in my coat sized closet 🤧 I couldn’t stop shopping and it all needed to come home with me
