Black Sesame Sweet Potato Banana Bread full of fiber and natural goodness 🖤🍠🍌

Honestly though why is the food so unhealthy at hospitals 😭

1 cup blended oats
¼ cup flaxseed mix
2 tsp cinnamon
½ Tbsp baking powder
½ tsp salt
1.5 cups roasted sweet potato, mashed
1 banana, mashed
½ cup black sesame butter (I use sesaone)
2 eggs
1 Tbsp avocado oil
2 Tbsp maple syrup

Black sesame layer
¼ cup walnuts
¼ cup black sesame seeds
¼ cup cooked purple rice
½ cup hot water

Garnish
Crushed walnuts
Banana slices
Roasted white sesame seeds

Instructions:
Preheat the oven to 350°F.
In a medium mixing bowl, whisk together all the dry ingredients until evenly combined.
In a large mixing bowl, mash the roasted sweet potato and banana until mostly smooth. Stir in the remaining wet ingredients until well incorporated.
Add the dry ingredients to the wet mixture and stir until fully combined.
To make the black sesame topping, blend all topping ingredients until slightly chunky. Add a small amount of water if needed to reach a spreadable consistency.
Line a 9”x5” loaf pan with parchment paper. Pour the batter into the pan and smooth the top. Spread the black sesame mixture evenly over the batter, then add any desired garnishes.
Bake for about 50 minutes, or until a toothpick inserted into the center comes out clean.
Let the bread cool for 15–30 minutes before slicing and serving.

A little salt water can buy your apple slices some time 🍎🧂

5 minute cold dip in 0.6-1% salt water is good (i.e. about 1/4-1/2 tsp per cup of water)!

Eggplant Shakshouka 🍆🍅🍳

Make sure to eat the skin for its antioxidant properties too! The main antioxidant found in eggplant peel is called “nasunin”.

⅓ cup chicken bone broth
Eggplant (about 400-500g), cut in half
Tomatoes (about 300-400g), cut in half
3 garlic cloves, cut in half
1 Tbsp tomato paste
1 tsp soy sauce
1 tsp fish sauce
1 tsp paprika
1 tsp dried oregano
¼ tsp salt
¼ tsp pepper
3 eggs
Choice of bread
Green onions

Add chicken bone broth to a pan over medium heat. Add the eggplant and tomatoes face-down along with garlic cloves to the pan. Allow broth to slightly boil, then cover the pan, reduce heat to low, and cook the vegetables for 15-20 minutes or until eggplant skin is loose (save the skin for later!).
Remove the skin off the tomatoes and eggplant then mash the vegetables.
Increase heat to medium and add in the seasonings. Stir over medium heat for 2 minutes until flavors are combined.
Crack 3 eggs on the skillet. Cover and allow it to cook for 7-8 mins or until done.
Once done, remove from heat, garnish, and serve with bread. Feel free to eat the skin for extra nutrients!

One-Pot Steamed Salmon Tomato Rice 🐟🍅🍚Combining 3 cooking methods that optimize both flavor and nutrition!

1 tsp avocado oil
½ Tbsp garlic, minced
1 Tbsp tomato paste
2 roma tomatoes, diced
1 cup rice
½ cup water
½ Tbsp chicken powder
1 tsp fish sauce
1 tsp soy sauce
5-6 oz salmon fillet
Salt and pepper to taste

Rinse the rice 3-4 times until the water runs mostly clear. Set aside.
Heat oil in a stoneware pot over medium heat. Add the garlic and sauté for 1–2 minutes until fragrant.
Stir in the tomato paste and cook for 1 minute to deepen the flavor.
Add the tomatoes and cook until they begin to soften and release their juices.
Stir in the rice, then pour in the water. Season with the chicken powder, fish sauce, and soy sauce, mixing until evenly combined.
Place the salmon fillet on top of the rice mixture.
Bring the liquid to a boil, then cover and reduce the heat to a low simmer.
Cook for 25–30 minutes, or until the rice is tender and the salmon is fully cooked. To prevent sticking or uneven cooking, you can occasionally lift the lid and gently shift the rice during cooking.
Garnish with salt and pepper to taste, sesame seeds, and green onion.
